Meatloaf omelet

What to do with leftover meatloaf? I know it's a question that weighs on many minds. Well, there's always the dog, and/or my favorite, meatloaf sandwiches. 

However, some years back I started making meatloaf omelets.  Simple and delicious, and the dog likes them too.

If you're new to making omelets and find them daunting, you can find lots of experts on the web. Or, you can just make a scramble. Tastes the same, looks a little different.

As far as a recipe goes, since an omelet is just eggs, you can add whatever you like. This morning mine had meatloaf, of course, a slice of American cheese,  and when finished cooking, a dollop ( from the Norwegian dolp) of sour cream and a nice glob ( from my mind. One glob = two plops.) of salsa.
